RECIPE 4 | Penne au gratin with courgette flowers and anchovies drizzle

Cinque Quinti in cucina con Velia Piade Vini & Affini” is back to the kitchen and today offers a main dish with a unique and strong flavor: penne au gratin with courgette flowers and anchovies drizzle

The main characters of this Thursday? Courgette flowers! Delicate but tasty, rich in vitamins and minerals like calcium, magnesium and potassium. Perfect for older and younger thanks to the important presence of calcium! Now all to the kitchen ready to prepare these fabulous and simple penne au gratin with courgette flowers and anchovies drizzle.

Ingredients for 4 people:

  • 320 gr of pasta
  • 10 courgette flowers
  • 1 bunch of aromatic herbs: parsley, thyme, marjoram, basil, chive
  • 1 garlic clove
  • Bread crumbs
  • Anchovies drizzle (you can find it at the supermarket)
  • Extra-virgin oil
  • Coarse Salt

STEP 1: first clean the courgette flowers by removing any filament, the pistil and the stem. Now wash them and dry them with care using some blotting paper. Cut them into slices, not to small as they are going to reduce while cooking.

STEP 2: now cut the bunch of fresh herb very thin. Take a cooking pan, heat few spoons of oil with the garlic clove and the herbs. Let them golden.

STEP 3: add the courgette flowers together with some handful of bread crumbs. Turn off the flame as soon as everything is well mixed, i twill take a couple of minutes maximum.

STEP 4: meanwhile heat up the water for the pasta. Add the a couple of coffee spoon of salt (not too much as the anchovies drizzle is pretty salty itself) and then add the pasta. Let it cook for the amount of minutes indicated on the box.

STEP 5: while the pasta is cooking you have the right amount to time to take your fresh and flowery bottle of Dedalo. A Monferrato Bianco DOC, 100% Arneis that thanks to its delicacy perfectly pairs with a dish with such a string flavor.

STEP 6: when the pasta is ready drip it and sauté it in the pan with the other ingredients for a couple of minutes. Turn it off and cook until creamy adding some anchovies drizzle. Be careful not to add too much as the taste is really strong and salty.
